初夏の献立  Early Summer Kaiseki Dinner menu 2024

ご夕食が初夏の献立に変わりました。
爽やかな里山の初夏をご堪能ください。
Dinner menu changed to the early summer’s one.

食前酒)梅 酒
Aperitif: Ume-shu(Japanese plum sake)

旬 菜)水前寺菜お浸し 蓬豆腐 水晶寄せ 柏寿し 鴨吟醸山葵 陸蓮根 枝豆霰揚げ 羽二重蒸し
Seasonal appetizer: Suizenjina salad, Yomogi(mountain plant) tofu,
Suisho-yose(crystal jelly; sweet potato, red beans and raspberry),
Kashiwa-sushi(smoked salmon sushi),
Duck with rice malt and Wasabi, okra, deep-fried Edamame with rice cracker
Habutae-muchi(steamed brothy custard)

Sashimi: Miyabi-dai(local sea-bream), Katsuo(bonito) with soy sauce and Wasabi
*Basashi(raw horse meat) is added to the guests who made a reservaiton by our website, by direct reservation, or who reserved rooms with private bath.

Grilled dish: grilled Yamame-trout with salt

Steamed dish: Renkon-manju(lotus root dumpling)

酢 物)蛸 苦瓜 茗荷 若布麺 小夏羹
Vinegared cocktail glass: Tako(octopus), Goya(bitter melon), Myoga(Japanese ginger)
Wakame-see weed noodles, Konatsu-citrus jelly

台の物)阿蘇美豚しゃぶしゃぶ※直予約や公式ウェブサイト予約のお客様、またお風呂付客室をご予約のお客様は「味彩牛しゃぶしゃぶ」となります。
Dainomono: Asobi-ton(local pork) shabu-shabu with local vegetables
*It changes to “grilled Ajisai-gyu(local beef) with dashi soup” for the guests who made a reservaiton by our website, by direct reservation, or who reserved rooms with private bath.
