Aperitif: Ume-shu(Yuzu citrus sake) with apple cider vinegar
Soup: oxtail soup
Seasonal appetizer: Chirashi-sushi, Sakura tofu, Hassaku-citrus salad,
Prawn with sake-paste, Hotaru-ika(squid), castella, young Ayu-trout marine
Duck roll, peach flower cake
Sashimi: Katsuo(bonito), Miyabi-dai(local sea-bream), squid
with soy sauce and Wasabi

Bowl: white fish Sakura roll
Bracken-jelly, Endo peas, bamboo shoot, raw Nori(seaweed), Sakura carrot, Arare(small rice biscuits)
Grilled dish: grilled Yamame-trout with salt
Boiled dish: Zenmai(mountain plant) deep-fried tofu roll, Spring fish(herring)
tofu, Tazeri(Japanese parsley)
Deep-fried dish: shrimp with Sakura flavor, adductor muscle and Fuki
