初夏の献立 Dinner Menu – Early Summer 2026

食前酒  緑茶梅酒
Aperitif:  Green tea Japanese plum wine

旬  菜  蛸膾 水前寺菜浸し 枝豆豆腐 柏寿し 厚焼玉子 鮎当座煮 川海老艶煮 鯛蓬味噌焼 霙抹茶羹
Seasonal appetizer: octopus dressed with vinegar, boiled Suizenji greens (a traditional Kumamoto vegetable), edamame tofu, smoked salmon sushi wrapped in oak leaf, egg cake, simmered Ayu-trout, glazed river shrimp, grilled sea bream with mugwort miso, and green tea jelly

Sashimi:  bonito and sea bream,
served with Ponzu sauce and Momiji Oroshi (grated daikon radish with chili).※For reservations made through our official website, direct bookings, or guests staying in rooms with a private bath, Kumamoto’s specialty horse sashimi with flavored oil is included.

Soup:  Clear soup with sea bass and sesame tofu, served with winter melon, baby corn, carrot, junsai (water shield), and myoga ginger, flavored with Sudachi citrus

焼 物  山女魚塩焼き 檸檬
Grilled dish:  grilled Yamame-trout with salt, lemon

蒸 物  蓮根饅頭 山葵
Steamed dish:  Steamed lotus root dumpling stuffed with minced chicken, served with wasabi

揚 物  稚鮎 海老 鶏塩麹揚げ 米茄子 摘草 山椒塩

Fried Dish:  Deep-fried young sweetfish, shrimp, and salt-koji marinated chicken, served with eggplant and seasonal greens, accompanied by Japanese pepper salt
